Recipe: Breakfast Casserole

I had company staying over so I was excited to have brunch with friends. Since my boyfriend had to be at work for 7 am, however, that meant if we wanted to eat together we would need to be awake and eating at 6 am. Yikes! The solution? A breakfast casserole. And some will power.

I prepped the night before by pre-grating the mozzarella and slicing the ham. I set my alarm for 4:45 am and crawled into bed.

The morning of, I pulled out the casserole dish, lined it with frozen diced hash browns, sprinkled cheese over the whole thing, and poured in a dozen scrambled eggs mixed with a cup of milk. I placed the ham on one half of the dish for my non-vegetarian friends. Kick it up a notch by swapping out the cold cut ham for real ham or crumbled bacon.

That’s it. Pop it in the oven at 375 F for an hour and crawl back into bed (don’t forget to set your alarm!).

I let it cool on the stovetop while I woke everyone and set the table with water, OJ, milk, as well as both table syrup and maple syrup. So. Good. My boyfriend and our guests were raving about it the entire day.

We have some big eaters in this house but if your family doesn’t eat like athletes, this would comfortably serve 6 adults without any additional sides. Whip up a fruit salad the night before and you could easily stretch the casserole into 10 servings.

It would also be super easy to modify this to add in diced bell peppers or asparagus for a little more nutritional value in the morning. The options are endless. Don’t be afraid to get creative and shoot me a picture if you give it a try!

  1. Grate mozzarella the night before.
  2. Preheat the oven to 375 F.
  3. Layer casserole dish with frozen hash browns and shredded cheese.
  4. Scramble 1 dozen eggs with 1 cup of milk. Pour into casserole dish.
  5. (Optional) Add ham or crumbled, fried bacon.
  6. Cook for 1 hour. Let cool before serving.
